Cheesecake with Caramel-Chocolate Glaze

Ingredients

  • Yubileynoye Cookies - 7.1 oz
  • Butter - 3.5 oz
  • Cottage cheese - 7.1 oz
  • Sour Cream - 7.1 oz
  • Farm fresh eggs - 4 pieces
  • Sugar - 3 tablespoons
  • Cream 22% - 2 fl oz
  • Condensed Milk - 1 can
  • Liquid dark chocolate - 3.5 oz

Step by Step guide

Step 1

Crush the cookies into crumbs, add 40 g of softened butter, 1 egg white, and mix. Knead the dough and place it in the freezer for 5 minutes.

Step 2

Line the bottom of a springform pan with parchment paper. Preheat the oven to 392°F. Remove the dough from the freezer, spread it in the pan. Try to make the walls higher so there is enough space for the filling later. Then, place the pan with the dough back in the freezer for another 10 minutes, after which immediately put it in the oven. Bake for 10 minutes.

Step 3

While the base is baking, prepare the filling: place the cottage cheese, 3 eggs, and sugar in a bowl and blend with a mixer. At the end, add the sour cream and blend again.

Step 4

Pour the filling onto the baked base and bake at 356°F for another 40–50 minutes. Remove the cheesecake from the oven and let it cool at room temperature.

Step 5

Prepare the glaze. In a saucepan, pour 50 ml of cream, add the condensed milk and 30 g of butter, stirring, heat over medium heat until the mixture becomes liquid. Let it cool slightly. Pour over the well-cooled cheesecake and smooth it out. Allow to cool completely.

Step 6

Meanwhile, prepare the second glaze. Chop the chocolate into small pieces and place it in a saucepan, add 30 g of butter, 30 ml of cream, stir, and heat until the mixture becomes liquid and homogeneous. Let it cool, then pour over the condensed milk layer. Place in the refrigerator for 3 hours.

Step 7

Carefully run a knife around the edges to detach the cheesecake from the sides of the pan.
