Ingredients
- Sugar - ½ cup
- "Jubilee Cookies" - 8.8 oz
- Melted Cheese - ½ cup
- Vegetable Oil - 1 tablespoon
- Semi-soft cream cheese - 10.6 oz
- Cream 22% - ½ cup
- Meyer Lemon Juice - 2 teaspoons
- Fresh Berries - 17.6 oz
Step by Step guide
Step 1
Preheat the oven to 392°F. Crush the cookies with half of the sugar in a blender. Add the softened butter and mix until smooth (by hand).
Step 2
Grease the bottom and sides of a springform pan with oil. Firmly press the mixture into the bottom and sides of the pan. It is important that both the walls and the transition between the walls and the bottom are quite thin (otherwise, there will be a lot of excess crust without filling, which will need to be trimmed for a good taste). Place in the oven and bake for 8 minutes. Allow to cool completely, then remove from the pan.
Step 3
Prepare the filling. Whisk the cream cheese with the remaining sugar. In a separate bowl, whip the cream with the lemon juice using a mixer. Gently fold the cream into the cheese mixture, mixing with light motions from bottom to top.
Step 4
Pour the filling into the cooled crust. Place in the refrigerator for 3 hours.
Step 5
Wash the berries, dry them, and arrange them on top. Return to the refrigerator for 30 minutes. (You can also use pieces of fruit for decoration, but berries provide the necessary tartness for the right balance with the sweetness of the cheesecake.)
