Ingredients
- Fresh Berries - to taste
- Heavy cream - 3 fl oz
- Powdered Sugar - to taste
- Semi-soft cream cheese - 21.2 oz
- Citrus Zest Mix - ½ piece
- Whole egg - 3 pieces
- Chicken Egg - 1 piece
- Butter - 6.3 oz
- Shortbread Cookies - 15.9 oz
Step by Step guide
Step 1
Crush the cookies into crumbs using a rolling pin. In a deep bowl, mix the crumbs with the butter until you have a uniform and pliable mass, then spread it across the surface of a springform pan, pressing the base firmly with a tablespoon; shape the edges. Bake in a preheated oven at 160°C (320°F) for 10 minutes, then let it cool completely. Reduce the oven temperature to 120°C (248°F).
Step 2
Beat the cream cheese with the powdered sugar until smooth. Add lemon juice, grated lemon zest, heavy cream, and mix everything at low speed with a mixer until homogeneous. Then add 1 egg and 3 yolks, mixing at low speed for no more than 1 minute (otherwise, air bubbles will form in the filling, causing the pie to deform during baking). Pour the filling onto the cooled base, spreading it evenly.
Step 3
Place a baking tray with water on the bottom rack of the oven, and position the cheesecake on the top rack. Bake at 120°C (248°F) for about 50 minutes. Allow the cheesecake to cool completely in the pan, then refrigerate for 6-8 hours.
Step 4
Carefully remove the chilled dessert from the pan, decorate with fresh berries and/or fruits. Before serving, dust the cheesecake with powdered sugar.
