Cheesecake with Liqueur
Ingredients
- Butter - 3.5 oz
- "Jubilee Cookies" - 7.1 oz
- Mascarpone Cheese Unagrande - 17.6 oz
- Semi-soft cream cheese - 10.6 oz
- Farm fresh eggs - 3 pieces
- Sour Cream - 4 tablespoons
- Sugar - 2.1 oz
- Liqueur - 1 tablespoon
Step by Step guide
Step 1
Melt the butter.
Step 2
Blend the Jubilee cookies (or similar cookies) with the softened butter in a blender.
Step 3
Spread evenly on the bottom of a mold with a diameter of about 24 cm. Bake in the oven at low heat for 15 minutes.
Step 4
While the crust is baking, mix the mascarpone, cream cheese (like Rama creme bonjour, Almette, Philadelphia, or similar; regular cottage cheese can be used, just make sure it's smooth), eggs, sour cream, sugar, and optionally a few tablespoons of liqueur, rum, or cognac (I add whatever I have).
Step 5
Mix everything until smooth, pour over the cookies in the mold, and bake at 356°F for one hour (DO NOT REMOVE IMMEDIATELY!!!), let cool slightly with the oven door ajar; if you take it out right away, the top may crack and it won't look nice!
