Description

This pie is called Chekhov's because, according to legend, it was made by the Chekhov sisters in the early 20th century for their intellectual guests. Ideally, Antonovka apples should be used for their incomparable aroma and tart flavor. Chekhov's apple pie is made exclusively with sour cream and a generous amount of apples. The dough should only hold the large apple slices placed on the base and must not cover them in any way. The finished pie can be sprinkled with cinnamon and garnished with berries.

Ingredients

  • Apple - 2 lbs
  • Wheat Flour - 2 glasses
  • Sour Cream - 1½ cans
  • Butter - 5.3 oz
  • Vinegar essence - 1 tablespoon
  • Sugar - 1 glass
  • Activated Baking Soda - ½ spoons
  • Chicken Egg - 1 piece

Grate room temperature butter and mix it with 1.5 cups of flour. Then, add half a cup of sour cream to the dough and mix well. Finally, add baking soda that has been activated with vinegar, stir, and knead the dough slightly with your hands. The dough should be soft and not stick to your hands.

Peel the apples, remove the cores, and use a vegetable peeler to slice them into thin pieces resembling petals.

Roll out the dough and shape it to fit the baking dish you will use for the pie. Place the dough in the bottom of the dish and arrange the apple slices on top.

In a separate bowl, mix 1 cup of sour cream, an egg, sugar, and 2 tablespoons of flour, and lightly beat until combined. The mixture should have a fairly liquid consistency. Pour the cream over the dough and apples in the baking dish.

Preheat the oven to 392°F, place the dish inside, and bake for about 50 minutes.
