- Cherry - 20 oz
- Bay leaf - 1 piece
- Green peppercorns - 4 pieces
- Lemon - 1 piece
- Red Grape Juice - 10 fl oz
- Cherries in Liqueur - 5 fl oz
- Sugar - 5 oz
- Cinnamon - 1 piece
- Vanilla salt - 1 piece
- Clove - 4 pieces
Step by Step guide
Step 1
Pour the frozen cherries with wine, a glass of water, and cherry liqueur. Add cloves, pepper, bay leaf, a cinnamon stick, a vanilla pod, sugar, and lemon zest cut into long strips. Place on the heat, bring to a boil, and cook for five minutes, then strain the syrup through a sieve.
Step 2
Remove the pepper, vanilla, and all other spice components from the cherries. Set the cherries aside, then return the spices to the syrup, which should be placed back on the heat and boiled for another fifteen minutes over medium flame.
Step 3
Strain the syrup again and pour it over the cherries. It's best to prepare this dish in advance, as it should sit for another couple of hours for the flavors to harmonize. Serve the compote with vanilla ice cream, or simply in glass cups on its own.
