Ingredients

  • Butter - 3.2 oz
  • Wheat Flour - 12 tablespoons
  • Fructose - 10 tablespoons
  • Coconut flakes - 1 tablespoon
  • Chocolate eggs - 4 pieces
  • Milk - 17 fl oz

Step by Step guide

Step 1

First, it's best to deal with the berries. So be patient and start removing the pits from the sweet and sour cherries. You will need about a small bowl of each.

Step 2

For the dough, grind 0.5 cups of almonds into a paste. In a large bowl, mix well 7.5 tablespoons of flour, 70 grams of butter, and 4 tablespoons of fructose, then add the ground almonds. Pour in 1 egg and knead the dough. Place it in the refrigerator for about 30 minutes.

Step 3

Prepare the filling with custard. Place the milk on the stove and bring it to a boil. In a separate bowl, mix 2 tablespoons of flour, 4 tablespoons of fructose, and 3 eggs. Mix very thoroughly, ensuring there are no lumps! When the milk boils, pour it over the prepared mixture and return it to low heat. Always stir the custard with a spoon, preferably wooden. The custard is ready when it evenly coats the back of a spoon. Turn off the heat and add the coconut flakes.

Step 4

Prepare the streusel. Streusel is a type of sweet crumb topping often used to decorate pies and tarts. Mix 2.5 tablespoons of flour, 20 grams of butter, 2 tablespoons of fructose, and 8 almonds, crushed into crumbs. Place it in the refrigerator.

Step 5

Take the dough out of the refrigerator, roll it out, and place it in a baking dish greased with butter. Pour the custard over it and distribute the berries on top. Place the pie in the oven. Wait until the custard sets because we still need to top the pie with streusel. Then quickly remove the pie, sprinkle it with the crumb mixture, and return it to the oven.

Step 6

Bake for another 30–40 minutes. When everything is ready, it's best to sprinkle the edges of the pie with almond flakes.
