Description
Enjoy! They pair wonderfully with Pu-erh tea or simply with coffee =) Attention! Despite the health benefits of these candies, it's best not to eat them right after lunch or dinner, even if your meal consisted only of vegetables. Please wait about an hour and a half before and after meals to enjoy a sweet and very healthy snack =)
Ingredients
- Ground dried cherries - ½ glasses
- Dried cranberries with sugar - 2.3 oz
- Coconut flakes - ½ glasses
- Honey - 2 spoons
- Meyer Lemon Juice - 3 spoons
- Almond - 15 pieces
Step by Step guide
Step 1
If the cherries and/or cranberries are very firm, soak them in hot water (not boiling) for 1-2 minutes to soften, then drain the water.
Step 2
Blend the cherries and cranberries together with the juice and honey until smooth (use a spoon to help scrape down the mixture and stir as needed).
Step 3
Add the coconut and stir with a spoon.
Step 4
With wet hands, roll the mixture into walnut-sized balls and place the candies on a plate (or smooth surface).
Step 5
Pour boiling water over the almonds. After a couple of minutes, remove the skins from the almonds and decorate the candies by inserting one nut into each.
Step 6
Place in the refrigerator for one hour.
