Cherry Chocolate Cupcakes
Ingredients
- Unsweetened cherry juice - 1 cup
- Marinated cherries - 10.6 oz
- Sugar - 2 tablespoons
- Honey - 2 tablespoons
- Vegetable Oil - 4 tablespoons
- Cocoa Powder - 1 tablespoon
- Cinnamon - 1 teaspoon
- Salt - to taste
- Activated Baking Soda - 1 teaspoon
- Wheat Flour - 2 cups
- Chocolate - 3.5 oz
Step by Step guide
Step 1
Preheat the oven to 356°F (350 degrees Fahrenheit). Grease the cupcake molds with vegetable oil.
Step 2
In a bowl, mix cherry juice, sugar, vegetable oil, and honey. Place the mixture over low heat and stir constantly until the sugar is completely dissolved. Then remove the mixture from heat and let it cool slightly.
Step 3
Add the baking soda. The mixture will start to foam and increase in volume. Add cocoa powder and cinnamon. Mix well.
Step 4
Add the cherries and gently stir to avoid damaging them.
Step 5
Finally, sift and gradually add the flour to the batter until it reaches a consistency similar to thick sour cream. On average, about 2 cups of flour will be needed, but it may be more.
Step 6
Fill each cupcake mold with batter about 2/3 full.
Step 7
Place the molds in the oven and bake for 25–30 minutes (depending on the oven).
Step 8
Check readiness with a wooden skewer.
Step 9
Allow the finished cupcakes to cool completely and drizzle with dark chocolate, melted in a water bath with the addition of 1–2 teaspoons of vegetable oil.
