Cherry Crepe Cake
Ingredients
- Egg white - 2 pieces
- Kefir - 7 fl oz
- Corn Starch - 1.4 oz
- Activated Baking Soda - a pinch
- Ocean salt - a pinch
- Erythritol - 2 tablespoons
- Olive Oil - to taste
- Semi-soft cream cheese - 3 oz
- Cherry - 1.8 oz
Step by Step guide
Step 1
In a bowl, mix the cream cheese and cherries.
Step 2
Add half a tablespoon of erythritol. If a sweeter cream is desired, more can be added. Blend thoroughly with a blender.
Step 3
Pour the cornstarch into a tall container.
Step 4
Add the kefir.
Step 5
Add 1.5 tablespoons of erythritol.
Step 6
Crack in the eggs.
Step 7
Add a pinch each of salt and baking soda.
Step 8
Whisk with a mixer.
Step 9
In a preheated pan, add the mixture in portions to the oil. The heat should be at maximum.
Step 10
Wait until the crepe browns and then flip it. Fry on medium heat for another 2–3 minutes.
Step 11
Spread cream on each crepe, then place a new crepe on top.
Step 12
Repeat until all crepes are used.
Step 13
Serve in portions.
