Description
Laura Johnson's cherry dumplings are considered the most delicious by our editorial team, to say the least. The best childhood comfort food from Odessa. Here's how Laura makes them.
Ingredients
- Wheat Flour - 20 oz
- Semolina - 5 oz
- Chicken Egg - 1 piece
- Salt - 0 oz
- Water - 10 fl oz
- Vegetable Oil - 0 fl oz
- Cherry - 20 oz
- Sugar - 5 oz
- Corn Starch - ½ spoons
Step by Step guide
Step 1
Mix the cherries with sugar, then transfer them to a sieve. The cherries will release juice, which will be needed for the sauce for the dumplings. Leave the cherries in the sieve for an hour.
Step 2
Mix the sifted flour, semolina, and salt. Add the egg, water, and vegetable oil, and knead the dough. Wrap the finished dough in plastic wrap and refrigerate for 30 minutes.
Step 3
Mix the cherry juice with the starch and place it over low heat. Stir constantly until it thickens to a jelly-like consistency.
Step 4
Knead the rested dough once more, roll it out thinly, and cut out circles using a glass or a specialized cutter. The dough is very dense, so it's easier to roll it out using a pasta machine. Place a few cherries on a piece of dough and seal the edges to form dumplings.
Step 5
Bring a large pot of water to a boil, add the dumplings, and once they float to the surface, transfer them to serving plates with sauce. Serve with sour cream.
