Cherry Ice Cream with Chocolate

Ingredients

  • Milk - 10 fl oz
  • Egg white - 3 pieces
  • Sugar - 5.3 oz
  • Marinated cherries - 14.1 oz
  • Cream 22% - 4 fl oz
  • Sour Cream - 7.1 oz
  • Chocolate - 3.5 oz

Step by Step guide

Step 1

Heat the milk in a saucepan, just below boiling point. Remove from heat and let cool for a few minutes.

Step 2

Place the yolks and sugar in a bowl and whisk until fluffy. Gradually add the cooled milk. Rinse the saucepan, return it to the heat, and cook on low for 5 minutes, stirring until the mixture thickens. Remove and let cool completely.

Step 3

Place the pitted cherries in a saucepan with water. Cook over medium heat for 5 minutes. Blend the cherries in a blender or food processor and set aside.

Step 4

Mix the puree with the egg cream, add the cream and sour cream, and transfer to a freezer-safe container. Freeze for 1–2 hours, then whip. Return to the freezer.

Step 5

When it is half-frozen again, whip and add the chocolate (grated or broken into small pieces). Return to the freezer and leave until firm, preferably overnight. Transfer to the refrigerator for 30 minutes.
