Cherry Pie with Cinnamon
Ingredients
- Puff Pastry - 17.6 oz
- Tapioca - 3 tablespoons
- Vanilla extract - 1½ teaspoons
- Corn Starch - 2 tablespoons
- Ground Cinnamon - ½ teaspoon
- Salt - ¼ teaspoon
- Sugar - 1¼ cups
- Marinated cherries - 31.7 oz
- Milk - to taste
- Vanilla Ice Cream - to taste
Step by Step guide
Step 1
Preheat the oven to 428°F.
Step 2
Grind the tapioca in a coffee grinder until it reaches a flour-like consistency.
Step 3
In a large bowl, mix the tapioca, cornstarch, cinnamon, salt, sugar, cherries, and vanilla. Mix well and let sit for 30 minutes.
Step 4
Roll out half of the dough on a floured surface and place it in a round pie dish. Trim the excess dough. Chill.
Step 5
Roll out the remaining dough and cut a circle slightly larger than the pie dish.
Step 6
Mix the cherries and place them in the pie dish with the dough, leveling them off and covering with the cut-out dough circle. Seal the edges well. Make several slits in the dough. Brush with milk and sprinkle with 1 tablespoon of sugar.
Step 7
Bake until the edges are golden brown for 15-20 minutes, then reduce the temperature to 374°F and bake for another 45 minutes. Cool for 3-4 hours and serve with vanilla ice cream.
