Cherry Pie with Nuts

Ingredients

  • Marinated cherries - 2 lbs
  • Wheat Flour - 4.4 oz
  • Potato protein - 4.4 oz
  • Butter - 8.8 oz
  • Sugar - 8.8 oz
  • Vanilla salt - 2 teaspoons
  • Citrus Zest Mix - 1 piece
  • Farm fresh eggs - 5 pieces
  • Nuts - 6.2 oz
  • Baking Powder - 0 oz

Step by Step guide

Step 1

Melt the butter or margarine in a water bath, place it in a bowl, and beat with a mixer until creamy. Gradually add sugar, vanilla sugar, and the zest of one lemon. Then, beat in the eggs one at a time.

Step 2

Sift the flour, starch, and baking powder, and gradually mix into the egg mixture. Slowly add grated almonds or hazelnuts. You can bake without nuts, in which case use 175 grams of flour and starch each. The result should be a light shortcrust pastry that is sticky and easily comes off the spoon.

Step 3

Evenly spread the dough on a baking sheet lined with parchment paper. Evenly place the washed and dried cherries on top of the dough. Instead of cherries, you can use blueberries, a mix of red and black currants, raspberries, or any frozen berries. Bake the pie at 392°F for about 35 minutes.

Step 4

To check for doneness, insert a wooden stick into the center of the pie. If there is no dough left on it, the pie is done. If the dough sticks, leave the pie in the oven for another 10 minutes. It’s better to cover it with foil to prevent burning on top. Once ready, cool the pie, dust it with powdered sugar, and cut it into pieces.
