Cherry Puff Pastries with Cognac
Ingredients
- Puff Pastry - 17.6 oz
- Frozen Cherimoya Fruits - 10.6 oz
- Sugar - to taste
- Cognac - 1.8 oz
- White Beans - 1 piece
- Egg white - 2 pieces
Step by Step guide
Step 1
Preheat the oven to 392°F. Prepare the filling. For this, place the cherries in a medium-heated skillet and simmer for 5 minutes. Add sugar to taste (depending on the acidity of the cherries) and simmer for another 5 minutes.
Step 2
Add the cognac (preferably French) and flambé. Set the finished filling aside.
Step 3
Roll out the room temperature yeast puff pastry to a thickness of 5 mm, dusting the dough with flour beforehand. Cut the rolled-out dough into portioned squares approximately 12x12 cm. You should get about 8 squares.
Step 4
Place 1 tablespoon of the filling in the center of each prepared dough square.
Step 5
Brush the edges of the square with egg yolk and seal the pastry into a triangle. Repeat steps 4 and 5 with all the squares;)
Step 6
Place the prepared pastries on a baking sheet (prepare the baking sheet by greasing it with a small amount of vegetable oil and dusting it with a thin layer of flour, creating a special coating). Let the pastries rest for 15-30 minutes for better rising.
Step 7
Brush the surface of the pastries with the remaining egg yolk and place them in the oven for 15 minutes until a brown crust forms. Ready;)
