Cherry Tart with Almonds

Ingredients

  • Wheat Flour - 7.9 oz
  • Salt - a pinch
  • Butter - 3.9 oz
  • Whole egg - 2 pieces
  • Almond - 0 fl oz
  • Water - 2 tablespoons
  • Cherry - 28.2 oz
  • Potato protein - 3 tablespoons
  • Sugar - 6.3 oz

Step by Step guide

Step 1

Sift together the flour, sugar (30 grams), and salt. Quickly grate the butter into the flour mixture and rub it in until the dough resembles bread crumbs. Lightly beat the egg yolks with the almond extract and add to the combined ingredients. Pour in the water. Quickly knead to form a smooth, slightly sticky dough. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Step 2

In a suitable saucepan, combine the thawed cherries and sugar (150 grams) and heat until the cherries release a significant amount of juice. Take and drain half a glass of juice, as we won't need it. Add the starch to the mixture and, stirring constantly, bring to a jelly-like consistency.

Step 3

Divide the dough into 4 parts (I have 4 individual tart molds). If you have one tart pan, there’s no problem; in that case, you don’t need to divide anything. Grease the mold with softened butter. Roll out the dough and line the mold, using any excess to patch up uneven areas. Top with the cherry filling and sprinkle with almond flakes. If using individual tarts like mine, bake for 30 minutes. If using one large mold, bake for 40–50 minutes.
