Ingredients

  • Chicken Egg - 2 pieces
  • Wheat Flour - 9.2 oz
  • Sugar - 7.1 oz
  • Butter - 7.1 oz
  • Vanilla extract - ½ teaspoon
  • Cocoa Powder - 3 tablespoons

Step by Step guide

Step 1

Chop the chilled butter into small pieces with a knife. In a large bowl, mix the flour, sugar, and salt. Gradually add the chopped butter, mixing well each time until you achieve a uniform crumb. It's easier to use a mixer, as it's difficult to achieve this by hand. Add the yolk of one egg and the vanilla extract to the butter-flour crumb. Mix until a homogeneous dough forms — it should come together into a ball.

Step 2

Divide the dough into two parts. Add cocoa powder to one part and mix thoroughly until evenly colored. Dust the work surface and rolling pin with flour. Roll out both parts separately into sheets of approximately equal size, no more than 1 cm thick. Trim the edges evenly. Cover the dough with plastic wrap and refrigerate for 1 hour.

Step 3

In a bowl, crack the contents of one egg and prepare a brush.

Step 4

Cut the chilled dough sheets into strips 1 cm wide with a very sharp knife. Lay them out in a row, alternating two light and one dark strip, while brushing their sides with the beaten egg. Brush the entire row with the beaten egg. On top, placing it directly over the bottom strip, lay out a second row of two dark and one light strip, and finish assembling with a third row, consisting of one dark strip and two light strips. Shape all the dough into pieces with round, square, or triangular cross-sections, brushing the joints with the egg mixture.

Step 5

Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Step 6

Slice the constructions into 1 cm thick pieces and place the chess cookies on a baking sheet lined with greased parchment paper.

Step 7

Bake in a preheated oven at 356°F for about 15 minutes. The cookies should turn golden brown.
