Description
I made this cheesecake both with and without chestnuts; you can replace them with any berries or fruits, or simply bake the classic version—a cottage cheese cheesecake without any additions.
Ingredients
- Peeled chestnuts - 7.1 oz
- Brown Sugar - 10 tablespoons
- Sugar - 1 cup
- Butter - 4.2 oz
- Whole egg - 1 piece
- Salt - a pinch
- Vanilla salt - a pinch
- Semi-soft cream cheese - 14.1 oz
- Wheat Flour - 6.3 oz
Step by Step guide
Step 1
Prepare and peel the chestnuts. Take the fruits, wash them, make a cross cut on each to prevent them from exploding, and place them in a preheated oven at 338°F. Once the chestnuts are in, reduce the temperature to 302°F. After about 15–18 minutes, the chestnuts are ready; remove them, let them cool, and peel them. If they break, it's not a problem; we will chop them into small pieces (about half the size shown in my photo).
Step 2
In a pan, melt a small piece of butter, add 5 tablespoons of brown sugar, and melt it while constantly stirring. Add the chestnuts, continuing to stir. The chestnuts should be completely coated in caramel. Once this happens, place them on parchment paper and forget about them for a while...
Step 3
Now let's prepare the dough. Mix half a cup of white sugar with the egg yolk, a bit of salt, add the butter and vanilla, and mix well. Gradually add the flour and knead the dough with your hands. The dough should be soft and slightly crumbly when we spread it into the form, similar to shortcrust pastry.
Step 4
Take a pie dish, line it with parchment paper, or simply grease it with butter. Spread the dough evenly in the dish, remembering to create nice edges. Prick the dough with a toothpick and place it in the refrigerator for half an hour, then into the preheated oven at 338°F. Bake the base for about 20 minutes.
Step 5
Prepare the filling. Mix the cottage cheese with 1 cup of sugar until all the granules dissolve. Pour this mixture into the already baked base and bake for another 10–15 minutes.
Step 6
After all of the above, let's remember our chestnuts; place them on top of the cottage cheese and pour everything with caramel!!! Read another point below.
Step 7
Caramel. In a pan, add 5 tablespoons of brown sugar and a little water (2–3 tablespoons), stirring constantly!!! The water should evaporate, and as soon as you smell the caramel, remove it from the heat (keep stirring) and pour the caramel over our pie! Leave this beauty untouched for about 30 minutes. Meanwhile, brew some tea, then cut a beautiful piece of cheesecake, and comfortably settle at the table.
