Description
Originally, this pie was a ceremonial wedding dish. However, over time, the baking process became simpler (instead of 12 ritual layers, 4–5 could be used), and it found its way onto the menus of cafes and diners. This pie is always savory, multi-layered, with different filling layers separated by pancakes. Most commonly, it is filled with chicken, rice, and mushrooms, making it essentially a complete meal of three to four courses wrapped in a pastry shell.

- Wheat Flour - 10.6 oz
- Kefir - 2 fl oz
- Chicken Egg - 2 pieces
- Sour Cream - 3.5 oz
- Sugar - 2 spoons
- Chicken fillet - 17.6 oz
- Grated Pecorino Pepato Cheese - 3.5 oz
- Garlic - 4 cloves
- Tomatoes - 12.3 oz
- Potato - 19.4 oz
- Dried Chamomile - ½ spoons
- Vegetable Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Sift the flour. Knead a dough from the flour, kefir, sour cream, 1 egg, 1 tablespoon of sugar, and 1/2 tablespoon of salt. Let it rest for 10 minutes.
Step 2
Divide the dough into four parts. Roll each part into a sheet about 5 mm thick and dust with flour. Using a large pot or plate, cut out equal circles from three of the sheets (the leftover dough can be used for decoration). Leave the fourth sheet as it is.
Step 3
Peel the potatoes, cut them into small cubes, and soak them in cold water to prevent discoloration.
Step 4
Cut the chicken into cubes, mix with grated cheese, and season with salt and pepper.
Step 5
Peel and chop the garlic. Cut the tomatoes into large cubes.
Step 6
Heat a skillet with vegetable oil over medium heat, sauté the garlic for 1 minute, then add the tomatoes and cook for another 2 minutes.
Step 7
Add 1 tablespoon of sugar and dried thyme to the tomatoes, and season with salt. Mix everything well and remove from heat.
Step 8
Preheat the oven to 320°F. Place a round sheet of dough on a baking tray lined with parchment paper, top it with sliced potatoes, and season with salt and pepper.
Step 9
Cover with the second layer of dough, then spread the filling of tomatoes on top. Cover with the final layer of dough and place the chicken with cheese on top.
Step 10
Cover the entire pie with the remaining layer of dough, sealing the edges with the bottom crust and trimming any excess. Crimp the edges of the pie into a decorative braid.
Step 11
From the leftover dough, shape any decorations (leaves, flowers) and attach them to the pie. Brush the surface of the dough with egg and bake the pie in the oven for 1 hour and 20 minutes.
