Description
I made this for myself while following a healthy diet, so I used a sugar substitute. Instead of coffee, you can use orange juice with grated zest, banana puree, various liqueurs, etc. You can bake it for 5 minutes less to achieve a brownie-like consistency.
Ingredients
- Chickpea - 5.3 oz
- Chicken Egg - 1 piece
- Egg white - 1 piece
- Cocoa Powder - 1.4 oz
- Ground Coffee - 0.7 oz
- Water - 0 fl oz
- Baking Powder - 1 teaspoon
- Saccharin - to taste
- Cinnamon - to taste
Step by Step guide
Step 1
Prepare the chickpeas in advance. Soak the chickpeas for 6–8 hours (preferably overnight) in water at a ratio of 1:2.
Step 2
Boil the chickpeas until tender (about 1–1.5 hours). Add coffee and water to the boiled chickpeas. Blend the mixture in a mixer until it reaches a smooth puree consistency.
Step 3
Transfer the puree to a bowl and gently fold in the egg, egg white, saccharin (or just sugar, stevia — whichever you prefer), baking powder, and cocoa powder.
Step 4
Pour the batter into a mold (it will be quite liquid).
Step 5
Bake in a preheated oven at 356°F for about 50 minutes (until done; a toothpick inserted should come out dry).
Step 6
Cool in the mold, then invert onto a serving plate. Decorate as desired.
