Description

The perfect charlotte, close to the classic version. A great option for a children's party—familiar, tried-and-true flavor and beauty.

Ingredients

  • Sugar - 7.1 oz
  • Wheat Flour - 7.1 oz
  • Chicken Egg - 3 pieces
  • Raisins - 1.1 oz
  • Apple - 1 piece
  • Butter - 0.7 oz
  • Meyer Lemon Juice - 1 tablespoon
  • Activated Baking Soda - a pinch
  • Chopped almonds - 0.4 oz
  • Powdered Sugar - 0.7 oz

Step by Step guide

Step 1

Separate the egg whites from the yolks. In a separate bowl, whisk the egg whites together with the sugar until a thick foam forms (whipping for a long time may eliminate the need for adding baking soda). Add the yolks and whisk again. While continuing to whisk, gradually sift in all the flour in a thin stream. Optionally, add baking soda that has been neutralized with lemon juice. Mix well.

Step 2

Slice the apple into wedges without removing the skin. Prepare the molds (it's best to use small silicone molds, 2 pieces). Grease them with softened butter. If the molds have decorations, place about 1 tablespoon of batter at the bottom of each mold to cover it. Then, add half of the raisins and apple wedges to each mold. Pour in the batter so that each mold is filled to 2/3 of its capacity. Bake at 392°F until cooked through. Check for doneness with a toothpick.

Step 3

Allow the finished charlottes to cool, then dust with powdered sugar and sprinkle with almond flakes. You can also use any other pastry decorations.
