Chinese Scallion Pancakes
Ingredients
- Wheat Flour - 4 cups
- Baking Powder - 1 tablespoon
- Salt - 1 tablespoon
- Vegetable Oil - 0.3 cups
- Sesame Oil - 2 tablespoons
- Scallions - 3.5 oz
- White Pepper (whole) - ½ teaspoon
- Mild Chili Spice - 1 teaspoon
Step by Step guide
Step 1
In a mixing bowl, mix 2 cups of flour and baking powder on low speed. While the mixer is running, add 2/3 cup of cold water to the flour; beat until a dough forms. Transfer the dough to a plate, cover, and set aside. In the mixing bowl, add the remaining flour and salt. While the mixer is running, add 2/3 cup of boiling water; beat until a dough forms. Return the dough set aside on the plate to the bowl and mix the two types of dough together. Transfer the dough to a lightly floured work surface and knead until smooth, about 4 minutes. Place in an oiled bowl, cover with a lid, and let sit at room temperature for 2 hours.
Step 2
Divide the dough into 2 parts and roll out half of the dough into a rectangle measuring 25x50 cm.
Step 3
Brush the dough with a mixture of 50/50 vegetable and sesame oil. Sprinkle half of the scallions, half of the chili flakes, and half of the white pepper over the dough. Roll it up from the long side and cut into 3 pieces, gently stretching each piece and shaping it into a round form, then using a rolling pin, roll each round to a diameter of 12 cm. Repeat the same with the remaining dough.
Step 4
Let the prepared pancakes rest for 10 minutes.
Step 5
Heat vegetable oil in a skillet and fry the pancakes for 5 minutes on each side until golden brown.
