Lay the potato slices on a towel, sprinkle with salt, and mix. Heat the oil in a deep skillet to 302°F. Fry the potatoes in batches, ensuring there's enough space for the slices, and cook until they are golden brown. Remove with a slotted spoon and place on a plate lined with paper towels. Then, add the next batch to the skillet.

Once all the potatoes are cooked this way, heat the oil to 356°F, and fry the potatoes in batches again until they are crispy. Sprinkle with salt and serve immediately.
