Ingredients
- Liquid dark chocolate - 6.3 oz
- Sugar - 4.6 oz
- Farm fresh eggs - 3 pieces
- Instant coffee - 3 tablespoons
- Butter - 4.9 oz
- Chopped almonds - 1.8 oz
Step by Step guide
Step 1
Brew the coffee. Proportions: 1 teaspoon of coffee to 3 tablespoons of water. Brew, strain, and pour 3 tablespoons into a saucepan.
Step 2
Break 120 g of chocolate into small pieces and add it to the coffee. Place the saucepan over a water bath and stir until the chocolate is melted.
Step 3
Beat 100 g of sugar with softened butter.
Step 4
Separate the yolks from the whites, adding one yolk at a time to the butter while continuing to beat until the mixture resembles cream.
Step 5
In a separate bowl, beat the egg whites with a pinch of salt and a tablespoon of sugar until stiff peaks form.
Step 6
Incorporate the chocolate into the buttercream, mixing well.
Step 7
Grind the almonds into a fine flour.
Step 8
Add the almonds and one-third of the egg whites to the chocolate-butter mixture.
Step 9
Combine the flour and cornstarch and sift them together into a separate container. Gradually add one-third of the dry mixture to the batter and mix. Alternately add the flour and egg whites. This process will make the cake light and crumbly.
Step 10
Grease a baking pan with butter. Pour in the batter and place it in a preheated oven at 170–356°F for 25–30 minutes.
Step 11
For the glaze: melt the chocolate over a water bath. Add coffee or brandy. Gradually incorporate the butter in small pieces, stirring until the glaze becomes glossy. Let it rest for about 15 minutes before decorating the cake.
Step 12
Cover the cake with the glaze and let your creativity run wild.
