Chocolate Almond Cake with Blackberries

Ingredients

  • Sugar - 10.6 oz
  • Farm fresh eggs - 9 pieces
  • Almond - 10.6 oz
  • Chocolate - 26.5 oz
  • Butter - 4 tablespoons
  • Serviceberries - to taste
  • Cream (40%) - 3 cups

Step by Step guide

Step 1

Preheat the oven to 356°F.

Step 2

Grate the chocolate or chop it in a blender.

Step 3

Whisk the egg yolks, sugar, and butter until smooth for about 3 minutes.

Step 4

Add the grated chocolate and almond flour, mixing until smooth and lumps disappear.

Step 5

Whip the egg whites until stiff peaks form.

Step 6

Fold the egg whites into the chocolate mixture in 3 additions: first 1/3, gently mix, then another 1/3 of the egg whites and mix, and finally the last part.

Step 7

Line a baking tray with parchment paper, grease with butter, and pour in the batter, smoothing the surface.

Bake for 20 minutes, check for doneness with a toothpick — if it comes out clean, it's ready.

Remove from the oven and let it cool completely in the pan.

Once the cake has cooled, run a sharp knife around the edge of the pan, press a large cutting board against the pan with the cake and flip it over so the cake remains on the cutting board, with the paper side up.

Carefully remove the paper.

Prepare the ganache: bring the cream to a boil and remove from heat.

Add the chocolate and butter, let sit for 3 minutes, and stir until smooth. Continue stirring the ganache until the mixture is smooth and elastic. Let it cool.

Pour 1/3 of the ganache over the cake and let it set.

Cut the cake into three equal parts.

Assemble them together, like separate layers into a single cake.

Trim the edges for a neat cake.

Then cut it into 2 equal parts and stack them for a tall cake.

Finally, pour the remaining ganache over the cake, decorate with blackberries and edible flowers.
