Ingredients

  • Farm fresh eggs - 4 pieces
  • Sugar - 7.1 oz
  • Wheat Flour - 4.2 oz
  • Olive Oil - 5 fl oz
  • 70% Dark Chocolate - 10.6 oz
  • Nuts - 3.5 oz
  • Orange zest - 1 teaspoon

Step by Step guide

Step 1

In a double boiler, melt broken pieces of chocolate with olive oil until smooth. The chocolate can contain nuts.

Step 2

Remove the chocolate and, while it cools, whisk the eggs with sugar vigorously. The eggs will provide fluffiness, so it's important to whisk them well. Gently pour the chocolate into the eggs and add the orange zest.

Step 3

Chop the nuts and mix them with the sifted flour. Gradually incorporate this flour into the egg-chocolate mixture and carefully fold the batter with a spatula, in one direction and without abrupt movements.

Step 4

Pour the batter into a greased pan and place it in the oven at 160°C (320°F) for 45 minutes. The cake bakes quickly, and it may seem like it needs more time—do not do this, as it will dry out the batter. As soon as a toothpick comes out clean, remove it.
