- Egg white - 1 piece
- Meyer Lemon Juice - 1 teaspoon
- Activated Baking Soda - 1 teaspoon
- Cocoa Powder - 3.5 oz

1. Whisk the egg with sugar and salt.

3. Gradually add the flour in small portions, stirring the batter regularly. Add the cocoa powder.

4. Add the olive oil and baking soda. Mix the batter and let it rest for 10 minutes.

5. The batter should be not too runny and free of bubbles on the surface. Pour with a ladle onto a preheated, clean skillet in small amounts, so that the pancake is about 10 cm wide.
