Chocolate biscuit with cherry filling and cream

Ingredients

  • Sugar - 3 tablespoons
  • Wheat Flour - 2.8 oz
  • Chocolate eggs - 4 pieces
  • Baking Powder - 1 teaspoon
  • Cocoa Powder - 2 tablespoons
  • 10% cream - 1 cup
  • Marinated cherries - 17.6 oz
  • Powdered Sugar - ½ cup

Step by Step guide

Step 1

Separate the eggs into yolks and whites.

Step 2

Add half of the sugar to the yolks. Beat the yolks with sugar using a mixer until the mixture lightens.

Step 3

In a separate bowl, beat the egg whites until soft peaks form. Then, while continuing to beat, gradually add the remaining sugar. Beat the egg whites with sugar until stiff peaks form (they should not spill out when the bowl is turned upside down).

Step 4

Add one third of the beaten egg whites to the yolks. Mix the mixture. Sift in the flour, previously mixed with baking powder and cocoa. Fold gently with a spatula, lifting the mixture from the bottom up.

Step 5

Add the remaining egg whites. Gently mix everything once more.

Step 6

Grease a springform pan with butter and line it with parchment paper. Transfer the batter into it and smooth the surface.

Step 7

Bake the biscuit for about 30 minutes at 356°F. Do not open the oven for the first 20 minutes, otherwise, the biscuit will fall. Once the biscuit is baked, leave it in the oven for about 1 hour.

Step 8

Cut the biscuit into 3 layers.

Step 9

Combine the cherries with sugar. Place over heat and boil for about 5 minutes. Cool, then strain the cherries through a colander. Soak the layers with the strained juice, and place some cherries on the soaked layer.

Step 10

To prepare the cream for the cake, whip the cream with powdered sugar.

Step 11

Spread cream on one layer, place the second layer on top, add cherries on it, and cover everything with cream, and so on, until the last layer. Leave for a few hours to soak.

Step 12

You can decorate the top with either fondant or chocolate shavings — whatever you like.
