- Whole egg - 3 pieces

- Baking Powder - 0.4 oz
- Butter - 6.5 oz
- Blackberry - 2 lbs
- 33% Cream - 7 fl oz
- 70% Dark Chocolate - 5.3 oz
Step by Step guide
Step 1
In a bowl, combine sugar, flour, salt, and baking powder. Soften 150 grams of room-temperature butter with your hands and mix it into the flour mixture until smooth. Then, add the egg yolks and knead into a soft, elastic dough — you can do this by hand or with a mixer.
Step 2
Divide the dough into three parts, placing each on a sheet of parchment paper and rolling it out into a circle 3 mm thick. Use a cutter or a glass to cut out circles from the dough, about 12 cm in diameter. Gather the scraps from the paper and place these sheets with the even circles directly onto a baking tray. Bake in a preheated oven at 356°F for ten minutes. Once the rounds are ready, allow them to cool.
Step 3
Place 60 grams of blackberries in a saucepan, mash the berries with a fork, and set over low heat. In another saucepan, heat 70 ml of cream without boiling. Once the berries are warmed through, break chocolate into them, pour in the hot cream, and vigorously whisk the melting mixture. When it becomes smooth and fluffy, incorporate 35 grams of butter and whisk for a few more minutes. Cool the mixture—this can be done quickly using a cold water bath.
Step 4
Meanwhile, whip 150 ml of cream into a thick foam, and when the chocolate cream reaches room temperature, gently fold in the whipped cream with a whisk.
Step 5
Place a dollop of chocolate-blackberry mousse, about one to two tablespoons, on each prepared round of dough. Surround it with blackberries from all sides to create a berry pyramid.
