Chocolate Blueberry Muffins
Ingredients
- Fresh Berries - 8.8 oz
- Sugar - 3.5 oz
- Wheat Flour - 1.4 oz
- Self-rising flour - 1.8 oz
- Milk - 2 tablespoons
- Cocoa Powder - 2 tablespoons
- Vanilla extract - ½ teaspoon
- Egg white - 1 piece
- Vegetable Oil - 1 tablespoon
- Water - 2 fl oz
- Meyer Lemon Juice - 1 tablespoon
- Olive Oil - 1 tablespoon
Step by Step guide
Step 1
Bake for 25 minutes. Let cool slightly, without removing the muffins from the molds (5 minutes). Then, carefully use a knife to detach the batter from the edges of the molds and remove the muffins. Allow to cool completely.
Step 2
Mix the water with the remaining sugar and cook, stirring, over low heat until the sugar is fully dissolved. Then bring to a boil and cook for another minute. Add the remaining blueberries and cook, stirring, for 1 minute. Remove from heat and stir in the lemon juice.
Step 3
Place the berries with syrup on top of the muffins.
Step 4
Preheat the oven to 180°C (350°F). Grease 4 muffin cups with a capacity of 150 ml with olive oil. Mix half of the blueberries with 1 tablespoon of sugar in a bowl and distribute them into the prepared cups.
Step 5
Sift the flour with cocoa powder. Add the milk, egg, vegetable oil, vanilla, and 2 tablespoons of sugar. Mix thoroughly. Spoon the batter into the cups over the blueberries and smooth the surface.
