Description
A dessert of rare beauty from a New York restaurant. No flour is needed, just skillful hands and almond amaretti cookies.
Ingredients
- Sugar - 10.2 oz
- Water - 1 fl oz
- 3.2% Milk - 13 fl oz
- Amaretti - 4.1 oz
- Cocoa Powder - 1.2 oz
- Chicken Egg - 3 pieces
- Whole egg - 1 piece
- Amaretto Liqueur - 0 fl oz
- Roasted Peanuts - 1 glass
- Vanilla Ice Cream - to taste
Step by Step guide
Step 1
In a saucepan, combine 140 grams of sugar and 50 ml of water. Bring to a boil and cook the caramel until it turns dark brown.
Step 2
Pour the caramel into the bonet molds, approximately 10 grams each, and let it cool.
Step 3
In a bowl, mix the eggs and egg yolk together with 150 grams of sugar.
Step 4
Thoroughly mix with cocoa powder, then add crushed amaretto cookies and liqueur.
Step 5
Heat the milk separately and then add it to the other ingredients, whisking continuously.
Step 6
Pour the resulting mixture into the molds over the caramel.
Step 7
Place the mold on a baking tray filled with hot water and bake in the oven at 302°F for 30 minutes, until the dessert thickens.
Step 8
Cool to room temperature. Then refrigerate for 12 hours. Serve the finished bonets with ice cream and roasted hazelnuts.
