Ingredients

  • Chicken Egg - 1 piece
  • Bittersweet Chocolate - 6 oz
  • Butter - 3.9 oz
  • Raw cane sugar - 2.8 oz
  • Hazelnut - 1.8 oz
  • Walnuts - 1.4 oz
  • Chopped almonds - 0.5 oz
  • Oranges - 3.5 oz
  • Mascarpone Cheese Unagrande - 8.8 oz
  • Brandy - 0.4 oz
  • Powdered Sugar - 0.7 oz
  • Ground Cinnamon - 0 oz
  • Date honey - 0.7 oz

Step by Step guide

Step 1

Melt a large piece of butter, sugar, and chocolate from a large package in a water bath.

Step 2

Grind the almonds and walnuts into fine crumbs in a blender; lightly crush the hazelnuts in a mortar or with the flat side of a knife.

Step 3

Separate the egg whites from the yolks; beat the egg whites with a pinch of salt until stiff peaks form; separately beat the yolks; while continuing to beat, add the chocolate-butter mixture and mix in the blended nuts until homogeneous, then gently fold in the beaten egg whites.

Step 4

Grease a baking dish with the remaining butter, pour in the batter, and bake in a preheated oven at 356°F for 20 minutes; cool to room temperature.

Step 5

Prepare the cream: grate the orange zest finely, squeeze out the juice; combine the zest with 2 tablespoons of orange juice, add the mascarpone, cinnamon, powdered sugar, pour in the brandy, and mix until smooth.

Step 6

Cut the chocolate layer in half lengthwise, spread cream on one half, and cover with the other half; melt the remaining chocolate in a water bath, add honey, mix; pour the glaze over the cake and smooth it out with a wide knife or spatula.

Step 7

Sprinkle with hazelnuts and serve.
