- Shortbread Cookies - 14.1 oz
- Cocoa Powder - 5 teaspoons
- Liquid dark chocolate - 10.6 oz
- Butter - 3.5 oz
- Bittersweet Chocolate - 5.3 oz
- 10% cream - 7 fl oz
- Fresh Mint - 2 stalks
- Fresh Berries - 10.6 oz
- Powdered Sugar - to taste
Step by Step guide
Step 1
First, prepare the crust. Crush the cookies in a blender and add cocoa powder. Melt the butter.
Step 2
Combine the crushed cookies and cocoa with the butter and blend in a food processor.
Step 3
Line a springform round cake pan with parchment paper. Grease the sides of the pan with butter.
Step 4
Press and spread the dough into the pan to create a base with edges that are 2-2.5 cm high. Place it in the refrigerator for half an hour to allow the dough to firm up.
Step 5
Prepare the ganache. Combine the chocolate with the butter. Melt everything together over a double boiler.
Step 6
Gradually pour in the cream while stirring, keeping the ganache on the heat. Mix the ganache until smooth, then remove from heat and let it cool.
Step 7
Take the cake pan out of the refrigerator, pour the cooled ganache over it, and place it back in the refrigerator for 1.5 to 2 hours.
Step 8
Garnish the finished cake with berries (you can use strawberries, raspberries, or blackberries), mint, and dust with powdered sugar.
