Chocolate cake with homemade cheese and cherries
Ingredients
- Margarine - 8.8 oz
- Sugar - 6.2 oz
- Salt - to taste
- Whole egg - 8 pieces
- Wheat Flour - 8.8 oz
- White Chocolate - 3.5 oz
- Baking Powder - 2 teaspoons
- Liquid dark chocolate - 1.8 oz
- Homemade Cheese - 10.6 oz
- Egg white - 6 pieces
- Cherries in Liqueur - 2 tablespoons
- Jam - 5.3 oz
- Marinated cherries - 5.8 oz
Step by Step guide
Step 1
Thoroughly beat the margarine with 100 grams of sugar and salt using a large whisk. Add the 6 egg yolks one at a time and whip everything into a fluffy foam.
Step 2
Sift in the flour mixed with baking powder, and while mixing thoroughly, gradually add the melted chocolate and chocolate shavings. Then gently fold in the egg whites whipped to a stiff foam.
Step 3
Line a baking pan with parchment paper, fill it with the batter, and bake in a preheated oven at 175–392°F for 45–50 minutes. Allow the finished cake to cool on a wire rack.
Step 4
In a bowl, combine the homemade cheese, yolk, sugar, and cherry liqueur, and mix well until smooth and creamy. Cut the cooled cake horizontally into two layers.
Step 5
Pass the cherry jam through a sieve, dilute with a small amount of water, and, stirring with a spatula, cook over low heat until it becomes a smooth puree without juice. Set aside half of the puree and spread it on one layer, then spread an even layer of cheese cream on top and evenly place the cherries (reserve 12 cherries for decorating the cake), after which cover this layer with the second layer and spread the remaining cherry puree on top. Finally, decorate the cake with the reserved cherries and sprinkle with chocolate shavings.
