Chocolate Cake with Pistachios and Olive Oil
Ingredients
- Wheat Flour - 0.9 oz
- Powdered Sugar - 2.8 oz
- Chopped almonds - 3.9 oz
- Sugar - 0.4 oz
- Chocolate eggs - 2 pieces
- Egg white - 2 pieces
- Olive Oil - 7 fl oz
- 10% cream - 17 fl oz
- Chocolate - 10.6 oz
Step by Step guide
Step 1
Preheat the oven to 374°F.
Step 2
Prepare the batter. In a bowl, mix powdered sugar, chopped pistachios, and flour with a large spoon, then gradually add 2 eggs while stirring. In a separate bowl, beat the egg whites with sugar until thickened. Slowly pour the egg white mixture into the batter while stirring, then add 15 grams of olive oil.
Step 3
Evenly distribute the batter and form 2 layers about 5 cm thick and 20 cm in diameter. Place the layers on a baking sheet lined with greased parchment paper and bake in the oven for 12–15 minutes. Remove the layers from the oven and let them cool.
Step 4
Melt the chocolate with a glass of olive oil in a water bath. Whip the cream. Allow the mixture to cool to 38–104°F and, while stirring, add the whipped cream.
Step 5
Assemble the cake using a springform pan with a diameter of 22–24 cm: evenly spread half of the chocolate mixture on one layer, cover with the second layer, and repeat with the remaining mixture. Place the cake in the refrigerator to chill and set.
Step 6
Before serving, remove the pan and dust the cake with cocoa powder.
