Ingredients
- Cocoa Butter - 10.6 oz
- Cocoa Beans - 10.6 oz
- Raw cane sugar - 3.5 oz
- Dark Raisins - 3.5 oz
Step by Step guide
Step 1
Grind the cocoa beans in such a way that the grind is heterogeneous — from large fractions to powder.
Step 2
Grind the sugar into powder. It is preferable to use unrefined cane sugar.
Step 3
Melt the cocoa butter in a water bath. Mix in the ground sugar and cocoa beans. The mixture should not heat above 122°F!
Step 4
Distribute the raisins into molds, pour the chocolate mixture over them, and place in the refrigerator for 4 hours to set. It is better to eat the candies not too cold — this way the texture and depth of the chocolate flavor are more fully experienced.
