Chocolate Cherry Cake

Ingredients

  • Marinated cherries - 17.6 oz
  • Wheat Flour - 3 cups
  • Sour Cream - 2 cans
  • Chocolate eggs - 3 pieces
  • Sugar - 1 cup
  • Butter - 7.1 oz
  • Cocoa Powder - 2 tablespoons
  • Activated Baking Soda - ½ teaspoon
  • Condensed Milk - 1 can

Step by Step guide

Step 1

About a week before the big day, soak two cups of cherries in half a cup of cognac. If you don't have cognac, you can use vodka. Personally, I've made that substitution before. I like to use a lot of cherries, so I take 2.5 to 3 cups.

Step 2

Next, for the batter, take 3 cups of flour, 3 eggs, 2 cups of sour cream, 1 cup of sugar, 2 tablespoons of cocoa powder, and ½ teaspoon of baking soda. Mix the batter, pour it into a greased pan, and bake for about 50 minutes at a temperature of 180–392°F.

Step 3

For the cream, beat the contents of the can of condensed milk and the pack of butter in a mixer. WARNING!!! For this recipe, only whole condensed milk with sugar and natural butter are suitable! I also add cocoa powder and a bit of the cognac-soaked cherries.

Step 4

Now, carefully cut the cake into two halves with a long sharp knife and use a fork (or spoon) to remove the insides. Mix the extracted cake crumb with 2/3 of the cream and the cognac-soaked cherries, and return it to both halves of the cake. Then spread the remaining cream on the bottom half and cover it with the second half. If this method seems too labor-intensive, you can simply cut off the top of the cake, remove the insides, mix them with the cream, and cover it back with the resulting 'lid.'

Step 5

Next, press down gently so that the 'filling' is compacted.

Step 6

Now for the glaze: mix 7 tablespoons of sugar with 3 tablespoons of milk and 2 tablespoons of cocoa powder. Place it on the stove and, stirring continuously, bring it to a boil, then turn off the heat and add a tablespoon of butter. Mix thoroughly and cover the cake with the resulting glaze.
