Chocolate Cherry Cookies
Ingredients
- Liquid dark chocolate - 1.8 oz
- Wheat Flour - 12.3 oz
- Farm fresh eggs - 2 pieces
- Butter - 7.1 oz
- Brown Sugar - 3.5 oz
- Ground Cinnamon - 1 teaspoon
- Powdered Sugar - 6.2 oz
- Baking Powder - 0.1 oz
- 70% Dark Chocolate - 1.8 oz
- Ground dried cherries - 4.2 oz
Step by Step guide
Step 1
Take the butter out of the refrigerator and let it warm to room temperature.
Step 2
Chop the chocolate and cherries. You can do this with a knife by shaving the edge off the chocolate bar; in a blender, or on a grater.
Step 3
Cut the butter into cubes and place it in a blender along with the sugar, powdered sugar, and cinnamon. Blend until the mixture turns pale and fluffy.
Step 4
Add the eggs to the running blender, then gradually add the flour and baking powder.
Step 5
Transfer the resulting mixture to a bowl and mix in the chopped chocolate and cherries. Cover and refrigerate for about 40-50 minutes.
Step 6
Preheat the oven to 347°F (or 350 degrees Fahrenheit for modern gas stoves). Line a baking sheet with parchment paper.
Step 7
Remove the mixture from the refrigerator, roll it into a log, and cut out balls the size of golf balls. Place them on the baking sheet, leaving a 3 cm gap between them.
Step 8
Gently press down on the balls to flatten them and bake in the oven for 16 minutes, or until the edges of the cookies are golden brown.
Step 9
Remove the baking sheet from the oven and let it cool for about 10 minutes. Carefully detach the cookies from the paper and place them on a rack or plate to cool completely (the cookies will be 'moist' and may seem slightly undercooked.
