- Salt - a pinch
- Butter - 4.4 oz
- Whole egg - 2 pieces
- Chestnut puree - 5.3 oz
- Bittersweet Chocolate - 4.4 oz
Step by Step guide
Step 1
Preheat the oven to 338°F in non-convection mode.
Step 2
Line 2 baking sheets with parchment paper.
Step 3
Blend the unsweetened chestnut puree and 100 grams of sugar in a blender.
Step 4
Using a stand mixer or hand mixer, beat the room temperature butter until pale.
Step 5
Gradually add 75 grams of sugar, salt, egg yolks, melted chocolate, and sweet chestnut puree, and mix until smooth. Sift the flour into the mixture and knead until a uniform dough forms.
Step 6
From the resulting mixture, roll balls the size of a walnut and flatten each ball with a fork to create characteristic lines.
Step 7
Bake in the oven for 35 minutes. Remove and let cool. Serve with coffee or milk.
