Description
This recipe is taken from a cookbook by John Smith. Love Bites is one of those home-baked recipes that always lifts your spirits. The root of the word 'bites' means 'delicious', and the second part, 'love', means 'very delicious', so it's clear that this is truly delightful. Other names for this treat include 'fancy squares', 'mock squares', and 'sweeter bites'. Love Bites is a wonderful blend of dark chocolate and strong coffee. Traditionally, it is topped with a sugary glaze, but we think a ganache version is more luxurious. Save a few tablespoons of your morning coffee to add to the ganache when you bake these squares in the evening. The perfect pastry for a chilly autumn day.
Ingredients
- Butter - 5.6 oz
- Wheat Flour - 10 oz
- Cocoa Powder - 4 spoons
- Baking Powder - 2 spoons
- Chicken Egg - 2 pieces
- Raw cane sugar - 7 oz
- Milk - 6 fl oz
- Heavy cream - 4 fl oz
- Espresso - 3 spoons
- Liquid dark chocolate - 4 oz
- Coconut flakes - 1.5 oz
- Salt - ½ spoons
Step by Step guide
Step 1
Preheat the oven to 374°F. Grease and flour a 23x33 cm baking dish.
Step 2
Melt the butter in a small saucepan (142 g). Remove from heat and let it cool.
Step 3
In a large bowl, combine the flour with the cocoa powder, baking powder, and salt.
Step 4
In a separate bowl, whisk the eggs with the sugar until frothy. Pour in the milk, oil, and vanilla extract, and whisk again. Sift the dry ingredients (flour, cocoa powder, baking powder, cane sugar) into this mixture and mix until a smooth batter forms. Pour the batter into the baking pan.
Step 5
Bake for 12–17 minutes. Check for doneness with a toothpick or knife: they should come out clean from the center. Remove from the oven and let cool.
Step 6
Make the ganache. Heat the cream and coffee in a saucepan over medium heat until bubbles form around the edges. Reduce the heat, add the chocolate, and melt it while stirring. Remove from heat, add the butter, and stir until it is completely melted. Allow to cool for about 1 hour.
Step 7
Spread the baked base with ganache and sprinkle with coconut. Cut into 24 equal squares.
Step 8
Store in a tightly sealed container in the refrigerator or freezer.
