I also made them with wheat flour, resulting in denser cookies. Buckwheat flour makes them more crumbly.
Ingredients
- Butter - 1.8 oz
- Sugar - 2.5 oz
- Egg white - 1 piece
- Buckwheat Groats - 3.5 oz
- Cocoa Powder - 4 tablespoons
- Ground Cinnamon - to taste
- Vanilla salt - to taste
Step by Step guide
Step 1
Beat the room temperature butter with sugar, add the egg, and beat again.
Step 2
Add the flour, cocoa, and spices, and knead the dough (it should be soft and slightly sticky to the hands).
Step 3
Wet your hands with water and pinch off small pieces of dough, roll into a ball, then flatten and place on a silicone mat / parchment paper / baking sheet. Bake for 15 minutes at 374°F.
