Ingredients
- Brown Sugar - 3.5 oz
- Butter - 1.8 oz
- Egg white - 1 piece
- Liquid dark chocolate - 3.5 oz
- Wheat Flour - 4.2 oz
- Baking Powder - ½ teaspoon
- Cocoa Powder - 1.8 oz
- Salt - a pinch
- Vanilla salt - to taste
- 10% cream - 1 fl oz
- Honey - 1.8 oz
- Hazelnut - to taste
Step by Step guide
Step 1
Melt the chocolate in a water bath. Remove from the bath and let it cool.
Step 2
In a deep bowl, beat the room temperature butter and sugar with a mixer, add the egg, and beat again. Add the melted and slightly cooled chocolate, and mix everything well until smooth.
Step 3
In another bowl, combine all the remaining dry ingredients, sifting the flour and cocoa. Add the dry mixture to the chocolate mixture and mix well with a spatula until the dough is uniform. Place the dough on a baking sheet lined with parchment paper: this can be done with a spoon or by rolling a ball with your hands and flattening it into a disc. This amount of dough makes about 10 cookies.
Step 4
Bake for 15-18 minutes at 180°C.
Step 5
For the caramel: in a heavy-bottomed saucepan, warm the honey, slowly pour in the cream, and cook, stirring to prevent the caramel from burning, over low heat until it thickens and turns amber.
Step 6
Drizzle the cookies with caramel and sprinkle with chopped hazelnuts.
