Description

The listed ingredients yield a small cake with a diameter of 15 cm; for a larger cake, I recommend doubling the amount of ingredients.

  • Butter - 3.5 oz
  • Bittersweet Chocolate - 3.5 oz
  • Sugar - 8.8 oz
  • Wheat Flour - 3.2 oz
  • Chocolate eggs - 2 pieces
  • Baking Powder - 1 teaspoon
  • 20% Sour Cream - 5.3 oz
  • Semi-soft cream cheese - 4.9 oz
  • Egg white - 2 pieces
  • Vanilla extract - to taste
  • Egg white - 2 pieces
  • Water - 1 fl oz

Step by Step guide

Step 1

Cut the butter (100 g) into cubes, break the chocolate (100 g), melt everything together and remove from heat. Whip 2 eggs with 60 g of sugar until fluffy. Pour the melted chocolate into the whipped eggs and whip again until smooth. Add the flour (90 g) with baking powder (1 tsp) to the chocolate mixture and mix well, then pour the batter into a greased baking pan and place in a preheated oven at 180°C for 20 minutes.

Step 2

For the cream, whip the yolks (2 pieces), sour cream (150 g), cream cheese (140 g), and sugar (40 g), adding vanilla extract to taste. Remove the cake from the oven and poke many holes in it (the more holes you make, the juicier the cake will be). Pour the cream over the cake and return it to the oven for another 30 minutes, reducing the temperature to 150°C.

Step 3

While the cake is finishing baking, you can prepare the meringue for decoration. Dissolve the sugar (150 g) in water (40 ml) and bring the mixture to a boil. Whip 2 egg whites with a pinch of salt, gradually adding the sugar solution, and continue whipping until stiff peaks form.

Step 4

Pipe the meringue onto the finished cake using a pastry bag with a round tip (if you don't have one, you can simply spread the meringue over the surface of the cake). Return the cake to the oven until the meringue is golden brown. The finished cake can be dusted with cocoa powder if desired.
