Chocolate-Cottage Cheese Muffins
Ingredients
- Butter - 3.5 oz
- Liquid dark chocolate - 3.5 oz
- Farm fresh eggs - 3 pieces
- Sugar - 3.5 oz
- Wheat Flour - 2.8 oz
- Baking Powder - ½ teaspoon
- Semi-soft cream cheese - 3.5 oz
- Vanillin - 0 oz
Step by Step guide
Step 1
Melt the chocolate and butter in a water bath, stirring thoroughly.
Step 2
Beat 2 eggs and 2/3 of the sugar until fluffy.
Step 3
Sift the flour, add the baking powder, mix into the batter, and add the chocolate-butter mixture.
Step 4
Separately, beat the cottage cheese with the remaining egg, sugar, and vanilla.
Step 5
Grease the muffin molds with butter and dust with flour (or use paper liners).
Step 6
Fill the muffin molds with the batter: one third of the chocolate mixture, then the cottage cheese mixture, and top with another layer of chocolate. Ideally, the molds should be filled to 2/3 of their volume.
Step 7
Bake the muffins at 356°F for 20–25 minutes.
