Chocolate-Cottage Cheese Pie

Ingredients

  • Butter - 3.4 oz
  • Farm fresh eggs - 4 pieces
  • Wheat Flour - 5.3 oz
  • Activated Baking Soda - 0.2 oz
  • Cottage cheese - 17.6 oz
  • Sugar - 3.2 oz
  • Cocoa Powder - 4.4 oz
  • Brown Sugar - 1.4 oz

Step by Step guide

Step 1

First, place the butter in the freezer. Meanwhile, prepare the filling by mixing the cottage cheese, eggs, and sugar until smooth.

Step 2

Remove the butter from the freezer and crumble it with the flour into fine crumbs.

Step 3

Add 3/4 teaspoon of baking soda (do not activate the soda!), 1.5 tablespoons of sugar, and 3 heaping tablespoons of cocoa to the flour. Mix with a cold spoon until the cocoa is evenly distributed.

Step 4

Grease the baking dish with butter and dust it with cocoa.

Step 5

Pour half of the crumb mixture into the dish, then pour all the filling on top, followed by the remaining crumb mixture. Distribute all layers carefully without pressing down, as the filling is very delicate and the crumbs are dry. Place in a preheated oven at 374°F for 45-50 minutes.

Step 6

Allow the finished pie to cool for at least 30 minutes. It’s best to place the dish on a damp towel during this time. I thought it would be nice to decorate the pie with some bright berries (like strawberries) and a sprig of mint.
