Description
Chocolate-Cranberry Oatmeal Cookies
Ingredients
- Wheat Flour - 1 cup
- Ground Cinnamon - ½ teaspoon
- Activated Baking Soda - ½ teaspoon
- Salt - ¼ teaspoon
- Butter - 10 tablespoons
- Sugar - ½ cup
- Brown Sugar - ½ cup
- Vanilla extract - 1 teaspoon
- Egg white - 1 piece
- Ground Oats - 1 cup
- Liquid dark chocolate - ½ cup
- Liquid dark chocolate - ½ cup
- Dried cranberries with sugar - ½ cup
- White Chocolate - 6 oz
Step by Step guide
Step 1
Preheat the oven to 356°F (350 degrees Fahrenheit). Line two baking sheets with parchment paper. Mix the flour, baking soda, cinnamon, and salt. Using a mixer, cream the softened butter with both sugars until fluffy. Beat in the egg and vanilla, then add the flour mixture and oats, mixing well. Chop all the chocolate into small pieces, reserving 60 grams of white chocolate, and add to the dough along with the cranberries.
Step 2
Drop large spoonfuls of dough onto the baking sheets, leaving space between the cookies. Bake for about 16 minutes until golden brown. Cool on the baking sheets for 5 minutes before transferring to a plate.
Step 3
Melt the reserved white chocolate in a double boiler. Drizzle over the cookies with a small spoon, making zigzag motions. Let sit for one hour until the chocolate hardens.
