- Glutinous Rice Flour - 1.1 oz
- Cocoa Powder - 0.4 oz
- Kefir - 5 fl oz
- Baking Powder - ½ spoons
- Water - 1 fl oz
- Raw cane sugar - 1.4 oz
- Coconut Milk - 1 tablespoon
- Milk - 10 fl oz
- Whole egg - 1 piece
- Corn Starch - 0.7 oz
Step by Step guide
Step 1
Whisk the eggs with salt and 10 grams of cane sugar.
Step 2
Pour in the kefir and add the baking powder, then beat again.
Step 3
Then add the flour and cocoa powder, mix well, and finally pour in the water and add the oil. Whisk the mixture and cook the pancakes on a well-heated non-stick skillet.
Step 4
For the cream, mix the starch with the milk, then add the sugar and the egg yolk. Place the mixture over medium heat. Stir constantly, without bringing it to a boil, and cook until it thickens.
Step 5
Spread cream on the pancakes, layering each subsequent pancake slightly overlapping and rolling them into a log. Then wrap the finished log in plastic wrap and refrigerate overnight.
