Chocolate Crustilian
Ingredients
- Liquid dark chocolate - 9.9 oz
- Chocolate eggs - 3 pieces
- Chocolate - 3.5 oz
- Pears - 21.2 oz
- Butter - 1.1 oz
- Salt - to taste
- Egg white - 6 pieces
- Corn Starch - ½ teaspoon
- Chopped almonds - 2.1 oz
- Crushed Vanilla Wafers - 2.8 oz
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
First, prepare the sponge cake. Melt the chocolate in a water bath. Separate 2 eggs into yolks and whites. Whip the egg whites until stiff peaks form. Set the yolks aside.
Step 3
Remove the bowl with chocolate from the water bath, crack in the egg, add the yolk and cornstarch. Mix the mixture thoroughly and gently fold in the whipped egg whites.
Step 4
Pour the batter into a greased springform pan and bake for 10 minutes.
Step 5
To prepare the crustilian, crush 60 grams of wafers into crumbs. Melt the chocolate with nuts in a water bath. Once the chocolate has melted, add the almonds and wafer crumbs.
Step 6
Remove the baked chocolate sponge from the pan and let it cool. Line the pan with aluminum foil and place the remaining sponge back in the pan. Spread a layer of crustilian (about 1 cm) on top of the sponge and refrigerate for 30 minutes.
Step 7
For the pear filling, wash the pears, peel them, remove the core, and cut the flesh into small cubes. In a skillet, heat the butter and sauté the pears for 6 minutes. Place the cooked pears on the crustilian and refrigerate again for 30 minutes.
Step 8
For the chocolate mousse, melt the chocolate, and whip the egg whites until stiff peaks form, adding a pinch of salt and gently folding them into the melted chocolate. Cover the pears with the chocolate mousse and place the dessert in the refrigerator for 3 hours.
Step 9
Break the remaining wafers. Before serving, sprinkle the dessert with the wafers.
