Description

For the cunning cream cheese frosting, you will need: 120 grams of smooth and not sour cottage cheese (not necessarily low-fat); 80 grams of cream cheese (any brand from Wave and Friendship to Philadelphia); 80 grams of room temperature butter; from 2 tablespoons of powdered sugar (depending on your love for sweetness). Combine all the room temperature frosting ingredients in one bowl and beat with a mixer on high speed until fluffy. You can splash in a tablespoon of cognac or your favorite alcohol for flavor. Don’t forget to top with a cherry. Yield — about 14–16 cupcakes depending on size. Note that these cupcakes, like other similar chocolate baked goods, should not be overbaked and it’s better to slightly underbake them so that the crumb forms but remains as moist as possible.

  • Cocoa Powder - 1 tablespoon
  • Baking Powder - 1 teaspoon
  • Salt - ¼ teaspoon
  • Butter - 3.9 oz
  • Brown Sugar - 5.3 oz
  • Vanilla salt - 0.4 oz
  • Boiling water - 8 fl oz
  • Large eggs - 1 piece
  • Wheat Flour - 5.6 oz
  • Cheese Spread - to taste

Step by Step guide

Step 1

Preheat the oven to 356°F. In a heatproof bowl, measure the cocoa, pour in the boiling water, mix thoroughly, and set aside to cool.

Step 2

Meanwhile, combine the softened butter, sugar, and a pinch of salt and beat until fluffy and pale. Once you achieve the necessary consistency, add the eggs one at a time.

Step 3

In a separate bowl, mix the flour with the baking powder and vanilla sugar.

Step 4

Combine the contents of both bowls and gently fold in the cooled cocoa mixture at the very end. It’s ready to bake.

Step 5

Fill the cupcake molds with the chocolate batter to 2/3 full and send the cupcakes to the oven for 15–20 minutes.

Step 6

Remove the finished cupcakes from the oven and let them cool on a rack, removing them from the molds (except for paper ones). Optionally, fill the cooled cupcakes with chocolate spread using a piping bag, or by cutting small holes in the crumb and filling them with a spoon.

Step 7

Optionally, decorate the cupcakes with cream cheese frosting (recipe in the note below) and top with a cherry.
