Ingredients
- Wheat Flour - 3 cups
- Baking Powder - 1½ teaspoons
- Vegetable Oil - to taste
- Coarse Salt - 1½ teaspoons
- Butter - 14.8 oz
- Liquid dark chocolate - 12 oz
- Sugar - 3 cups
- Farm fresh eggs - 6 pieces
- Vanilla extract - 1 tablespoon
Step by Step guide
Step 1
Preheat the oven to 356°F. Lightly grease a muffin pan with vegetable oil, then place a paper liner in each cup and spray with vegetable oil again. Also grease a small square baking dish with vegetable oil.
Step 2
In a bowl, mix the flour, baking powder, and salt.
Step 3
Melt the butter and chocolate in a double boiler until smooth.
Step 4
Add sugar to the chocolate mixture and beat with a mixer for 3 minutes. Add the eggs one at a time, mixing well, then add the vanilla. Reduce the mixer speed and gradually add the flour.
Step 5
Divide the batter among the muffin cups, filling them two-thirds full. Spread the remaining batter in the square baking dish. Bake for about 20 minutes until done, checking with a toothpick. Cool in the pan.
Step 6
Transfer the square cake to a work surface and cut out small hearts using a cookie cutter.
Step 7
Frost the cupcakes with the cream (see note), and top with the hearts.
